The groundbreaking cookbook credited with revolutionizing American dining by bringing the starter course to the forefront. "Shircliffe’s book, published in 1926, was the first of its kind, featuring hundreds of recipes for creative salads and dressings. Through his book, Shircliffe, a charter member of the Chicago Food and Wine Society, sought to change how Americans viewed and ate salad, creating new generations of healthy eaters" (Linze Rice, Block Club Chicago). The Edgewater Beach Hotel, which opened in 1916, was one of the city’s ritzier hotels in a mansion-filled neighborhood, a magnet for wealthy Chicagoans and visiting movie stars. Tall octavo: xxi, [1, blank], 265, [1, blank] pp. with 8 color plates. Original green leatherette binding, with gilt-stamped titling and dark green-stamped borders.
