Goins, a veteran head waiter, was consistently employed at such leading hotels as the Albany Hotel in Denver, the Vincennes Hotel in Chicago, and the Neil House in Columbus, and also ran a school for black wait staff. Comprehensive and detailed, his manual provides instructions on everything from setting tables properly to restoring rancid salad oil, along with some poignant advice on how to “take it”. Tall 12mo: [iv], 225, [3, blank], 8 [ads] pp. with numerous textual figures. Original flexible black cloth binding, with gilt-stamped titling.
